Dec 10: Butternut Squash Sausage Soup, Cilantro & Mint Pork, Shepherd’s Pie

Typically, we prep all our meals on Sunday, but we had company, so we knew we would have to cook during the week.

We planned out our recipes and went shopping Saturday morning. We spent the rest of the weekend with company.

On Tuesday, we cooked TWO meals. We had one for dinner and plated up the rest. We cooked the THIRD meal on Wednesday for dinner and plated up the other serving.

Butternut Squash & Sausage Soup… This is an amazing soup that will warm you up on a winter day. A nice butternut squash taste with Italian sausage, spinach/kale, and peppers. An easy one pot dish.

Cilantro & Mint Pork Tenderloin… Wow, this dish was incredible and incredibly easy to make. Grab your oven-safe skillet, sear your pork loin with carrots & spices and bake along with your veggies!

Shepherd’s Pie… Always a favorite in our house. We use lean Bison, but of course, you can use Beef. Use an oven-safe skillet to prepare the flavorful meat & veggie filling, top with steamed mashed sweet potatoes and finish off in the oven! YUM!
