Wow, more and more beautiful colors this week!
It makes me feel like we’re doing something right! lol. And, I’m finding that almost every dish we make is gluten-free!
ALL of these recipes are amazing. The Sweet Thai Chicken dish is new and completely wonderful to cook. The aroma of the cashews sauteing in the pan is amazing… and the Beef Skillet is another one of our ALL TIME favs.
Sweet Thai Chicken & Cashew (GF)… A simple ONE skillet dish with chunks of chicken breast simmered in a blend of curry paste, tamari, and honey with pineapple chunks, bell pepper and cashews! A glorious smell when they start roasting! We served it over our favorite Jasmine rice with a bed of shredded spinach that will wilt when heated up. We highly recommend this recipe!
Hoisin Cauliflower & Coconut Rice Noodles (GF)(VG)… A nice vegetarian dish with sweet roasted cauliflower and Brussels sprouts over rice noodles sauteed in coconut milk. Garnish with green onions and enjoy!
Ground Beef & Veggie Skillet (GF)… Another ONE skillet meal that is simple and amazing. While your sweet potatoes are roasting to perfection, saute ground beef (or bison) with zucchini, onions, bell peppers, and tomatoes with fresh basil and cilantro! Easy to bulk up for a big family! A delicious way to get your protein and favorite veggies (substitute your favs)!
