We prepped 3 meals to have this week, and we have a 4th meal planned; meaning, we have a 4th meal planned with ingredients at home ready to cook. We don’t have to think about what to cook, its already decided which also takes the pressure off: Roasted Sweet Potato & Black Bean tacos.
Smoked BBQ Shrimp & Avocado Salsa (GF)… Add an amazing smokey paprika and BBQ taste to your shrimp with this nice blend of spices. Sauteed on a hot skillet and served with a cool avocado & tomato salsa along with Jasmine rice. Super simple. Super yummy!
Tangy Ground Turkey & Green Bean Skillet (GF)… This is an amazing tangy tomato one skillet dish you can make your own. We chose a base of green beans with ground turkey. An easy dish you can bulk up for a big family!
Quinoa Enchilada Bake (GF)(VG)… Learn how to make your own enchilada sauce from scratch! OR, if you’re pressed for time, buy your fav premade sauce. Mix the quinoa with veggies, top with cheese, and bake! The sauce does have flour, so to keep this gluten-free, buy a gluten-free all purpose flour.
