We’re still playing catch up from vacation…
BUT, if you remember, we made extra Basil Bison Patties along with a batch of Tangy Chicken and froze it before vacation.
When we came back, we thawed those out for meals. With the Bison, we made steamed broccoli & cilantro/lime rice.
With the chicken, we made big salads!
So, this week, we only feature ONE new recipe, Shrimp Boats!!, along with 2 other favorites!
Spicy & Sweet Shrimp Boats w/Slaw… From a quick picture I saw on social media, came this fancy, yet simple, creation. Spoon out some cucumbers, stuff them with ginger lime rice and garnish with crunchy carrots & spicy shrimp!! I topped it with a tangy yogurt sauce and served it up with a sweet sesame slaw! SUPER YUMMY… & MESSY!
Tahini Chicken Salad w/Apples & Walnuts… This is BY FAR our favorite chicken salad. Tahini is pressed sesame seeds with a bitter and nutty flavor, but an excellent source of mineral and healthy fats. When mixed with vinegar, salt & pepper, it’s very tasty.
Typically, we make it with grapes and slivered almonds, but we changed it up to apples and walnuts. What combination do you like?
Tofu Sofritas w/Mex Cauliflower Rice… Even if you’re not a fan of tofu, you will LOVE this dish. It has such an amazing chipotle flavor and kick to it; loaded with fresh toppings in a low carb flour tortilla, it’s hard to beat. We think you’ll enjoy it!
We paired it with Mexican-style cauliflower rice.
