June 9: Peach & Pecan Salad, Veggie & Shrimp Pad Thai, Slow Cooker Beef Carnitas

❤ We are back on track!

We are a bit delirious in this video… at least Amy is, lol… because we started our day with yard work! Yep! And, it’s hot, y’all!

But, that said, Amy picked the line up this week, and THESE RECIPES ARE AMAZING!! She did good!

Peach & Roasted Pecan Salad (GF)… Don’t buy pre-made salads! Prep your own and be happy! Along with peaches and roasted pecans, we added goat cheese, quinoa with sauteed asparagus on a bed of spinach, spring greens, and some mint! We also whipped up a special balsamic dressing to bring it all together! YUM!

Loaded Veggie & Shrimp Pad Thai (GF)… Wow. I mean wow! This is loaded with zucchini and yellow squash, but you would never know. It cooked down nicely with the rice noodles and shrimp. THIS is a keeper in the Favorites Tab!

Slow Cooker Beef Carnitas (GF)… SIMPLE! Rub down some tenderized flank steak and top it with onions, peppers, and jalapenos! Wrap it in corn or flour tortillas along with avocado and a fresh salsa!
