June 16: Sweet & Spicy Chicken Bowl, Balsamic Steak, Tomato & Basil Cod

Another batch of amazing recipes this week… if I do say so myself.

And I am saying so, since Amy was out of town at a conference, which left me to wing it. I just love throwing stuff together! Drives Amy crazy.

Colorful dishes this week are:

Sweet & Spicy Chicken Buddha Bowl (GF)… Wow!! Just wow! This was super tasty. I microwaved the dish for 1 minute which loosen up the sauce again and drizzled some soy sauce which made it perfect! A nice sweet & spicy flavor with a hint of peanuts.

Balsamic Steak w/Chickpea & Feta Salad (GF)... This is a super simple and fantastic marinade. I left it marinating for about 30 minutes before I threw it in the skillet. Paired with an extraordinary Chickpea, Cuke, Feta, and Tomato salad.

Tomato & Basil Cod w/Peach Broccoli Slaw (GF)… Another truly simple dish, just be careful when you sear the cod. Use low heat and take your time, because you can whisk together an amazing sauce of fresh basil, tomatoes, garlic, and olive oil to pour over it. I paired this with a fresh peach and broccoli slaw. Super yummy!!
