June 23: Shrimp Spring Bowls, Teriyaki Bison & Veggies, Lemon Chicken Pasta Salad

Amy is passing along some wisdom this week with our recipes. We always strive to make it easier in the kitchen for you with options… but remember, chances are, you are already ahead of the game preparing food at home as oppose to eating out.

Taste the rainbow this week!

Shrimp Spring Roll Bowl (GF)… This is amazing lime-marinated shrimp bowl with cukes, peppers, carrots, avocado, not only over rice noodles, but zucchini noodles as well! Cut the carbs in half by cutting out some rice noodles!

Teriyaki Bison & Cauliflower Stir Fry (GF)… Not all teriyaki sauces are equal, and most are loaded with sugar. We used Primal Kitchen’s sauce which is flavored with coconut aminos and date paste, but of course, use your fav over some ground bison with stir-fried cauliflower, carrots, peppers , and broccoli.

Lemon & Basil Chicken Pasta Salad (GF)… Ever tried Gluten-Free rotini? We tried Barilla GF rotini, and it’s fantastic! We marinated the chicken in lemon juice, and added the zest to the salad along with fresh basil & veggies. Super light and fresh for a summer dish!
