July 14: Coconut Lime Cod, Turkey Quinoa Enchilada Bowls, Black Bean Enchiladas

Woo, I guess we’re missing our Tex-Mex this week, we have TWO enchilada dishes!

PLUS, a breakfast with Amy’s simple recipe for turkey sausage. A great protein dish to get you powered up in the morning; a great dish if you’re always rushing in the morning!

Coconut Lime Cod w/Peach Edamame Salad (GF)… WOW! This dish is definitely best served immediately, but so much flavor here from coconut to lime. We chose Cod for this one, but you can definitely use any fish. Pick your fav! We paired it with an amazing peach & edamame salad; an excellent fresh and light complement!

Turkey & Quinoa Enchilada Bowls (GF)… Not a fan of tortillas? This is a great dish to satisfy that enchilada craving. Pair it with your favorite roasted veggie.

Black Bean, Spinach, Mushroom Enchiladas (VG)… We used low carb flour tortillas on this one, but corn would be great, too, to make it Gluten-Free! The fresh salsa on top really brings this dish together paired with an amazing cauliflower Mexican rice!

Turkey Sausage & Eggs over Spinach (GF)… A great dish to prep for those busy mornings to get your protein and energy boost! While you’re boiling some eggs, simply, throw in some unique spices with ground turkey and fry them up. Create your bowls with a handful of spinach!
