Coconut Lime Cod w/Peach Edamame Salad (GF)… WOW! This dish is definitely best served immediately, but so much flavor here from coconut to lime. We chose Cod for this one, but you can definitely use any fish. Pick your fav! We paired it with an amazing peach & edamame salad; an excellent fresh and light complement!
Turkey & Quinoa Enchilada Bowls (GF)… Not a fan of tortillas? This is a great dish to satisfy that enchilada craving. Pair it with your favorite roasted veggie.
Black Bean, Spinach, Mushroom Enchiladas (VG)… We used low carb flour tortillas on this one, but corn would be great, too, to make it Gluten-Free! The fresh salsa on top really brings this dish together paired with an amazing cauliflower Mexican rice!
Turkey Sausage & Eggs over Spinach (GF)… A great dish to prep for those busy mornings to get your protein and energy boost! While you’re boiling some eggs, simply, throw in some unique spices with ground turkey and fry them up. Create your bowls with a handful of spinach!
