Just me (Paul) on deck this week, which usually means some experimenting, but I kept my composure. All is well… or more importantly, ALL IS GOOD!!!
We got 3 new recipes this week along with 1 of our favs: Turkey Muffins. I paired this with a Almond & Cranberry slaw, and WOW, so good. Sometimes, I impress Amy. Lol.
Garlic Parm Chicken & Sweet Potato Medallions (GF)… A simply delicious AND EASY dish to make. Everything gets put i the oven! Generously season the chicken and lay on a decadent-like garlic & parm sauce. Cut up the sweet potatoes & broccoli and bake to win! Enjoy! This is a good one!
Mediterranean Shrimp over Beets (GF)… An unusual collection of spices on this one, but the result is amazing! Thyme, Cumin, Oregano & Fennel Seed marinade on the shrimp served over roasted beets with sauteed lemon zucchini and red onions! YUM!
Sweet & Spicy Steak Stir Fry… Simply leave the flour out to make this Gluten-Free. While the steak is baking in the oven for a short time, get your veggies going in the skillet or wok with soy sauce & honey, and a little chili paste to kick it up? Throw in the steak with some pickled ginger to bring it all together! Sweet & Spicy!
Turkey Muffins with Almond/Cranberry Slaw (GF)… This is definitely on of our favs, especially when we just want a good protein and veggie dish. This time around I paired it with green beans as well as a tasty & sweet Almond & Cranberry broccoli slaw. Ooooo, this is good!
