These are some great recipes! The cod is highly recommended. Such an amazing sweet and salty flavor along with Bok Choy & Veggies. We love Bok Choy!
And did someone say, “TACO TUESDAY!” or taco WEEK? We got some Korean-Style tofu tacos (and fair warning, tofu takes awhile to cook until crispy), AND some Hawaiian chicken, slow cooked with pineapple, for some lettuce wraps! YUM and YUM!!
Miso & Honey Cod with Bok Choy Veggies (GF)… Fresh cod broiled with a sweet & salty Miso & Honey glaze served up with sauteed Bok Choy mushrooms, carrots, & red onions. An amazing protein and veggies dish!
Korean Tofu Tacos & Edamame Quinoa Salad (VG)... Oooo, get ready for a kick! Of course, you can tame down the chili paste, but this is spicy Korean-style tofu with purple cabbage, carrots, and sweet cucumber! I paired this with a sesame ginger edamame and quinoa salad.
Hawaiian Chicken Wraps (GF)… Mmm, chicken that is slooooow cooked in the crock pot with pineapple, red onions, coconut aminos, and ginger. Load it up in some lettuce wraps with cabbage, avocado, and slivered almonds!! (our lettuce was no good, so we made ours with tortillas).
