Aug 25: Blackened Steak CauliRisotto, Veggie Quinoa Salad, Chicken Bento Box

Even though it was a bit cooler this week, we had this idea for cold soups, but maybe other time… lol.

Instead, get ready meat and veggies lovers! We whipped up an amazing steak dish along with an amazing fall quinoa salad!! Both are definitely a must try! Since we knew these were gonna be a bit more work, we made a third simple and customizable chicken bento-box style recipe you can nibble on at work or home!

Blackened Steak w/Parmesan Sauce & CauliRisotto (GF)… Ooo, a nice treat that is not too decadent! You’ll definitely fool those taste buds with this creamy cauli-risotto served under this amazing blackened steak with a smokey paprika rub. We topped the steak with a Parmesan sauce and paired the dish with broccolini and greens… feel free to pair it with your fav veggies!

Harvest Veggie Quinoa Salad (GF)(VG)… Yum. A nice collection of roasted fall veggies with quinoa, dried cranberries, pumpkin seeds, and goat cheese. All is tossed with a simple sweet vinegar-based dressing.

Chicken & Veggie Bento Box (GF)… Here’s one way to keep lunch simple! You can nibble on this at your desk at work or at home. Customize the entire dish! Bake the chicken with your favorite spices, pair it with YOUR favorite snack veggies, and dip it all in YOUR favorite salad dressing.
