Sept 29: Thai Basil Beef, Buffalo Turkey, Caprese Chicken… & Spicy Tofu!

Some days are easier than others… Today, was NOT that day.

Amy got hit hard with allergies, and actually, it was funny to see her in zombie mode, but it made for a long time in the kitchen. Honestly, we were both a bit slow… plus, I was busy trying to perfect my Chewbacca impression.

We also revisited a Spicy Tofu dish we made back in April. SO MUCH easier & better with an Air Fryer!

Thai Basil Beef & Stir Fry Veggies (GF)… Another great ONE SKILLET dish. We used tenderized flank steak & marinated it with coconut aminos, ginger, and fresh garlic… it was amazing! And then sauté your favorite veggies in the juicy bits left behind. We used baby Bok choy, green beans, and a mushroom mix!

Buffalo Turkey & Blue Cheese Salad (GF)… Satisfy your buffalo wing craving with this spicy dish. We loaded ground turkey with celery, spices, and buffalo wing sauce. Grilled them up and made a side salad with carrots, celery, red onions, and blue cheese! YUM YUM!

Caprese Chicken & Veggies (GF)… Ok, this recipe really surprised us. We used simple ingredients, but adding the arrowroot slurry into the balsamic mixture made it thicken up to coat the chicken and fresh tomatoes. Topped with fresh basil brought it home. We paired it with steamed broccoli.

Spicy Crunchy Tofu w/Quinoa & Greens (GF)(VG)… Wow, so, we made this before, and cooking tofu take awhile, BUT NOT IN THE AIR FRYER! Instead of frying it, coat it and air fry it for 13 minutes. It delivers nice & crunchy tofu! Sauté it to add an amazing spicy flavor & serve over a great mix of quinoa and greens with edamame and roasted beets!! SUPER YUM!!
