Oct 27th: Shrimp w/Poblano Sauce, Bison Picadillo, Sweet Potato Chipotle Stew

Ooo, Amy let me loose again with the menu and in the kitchen!

It’s kind of rare, because usually, she wants to know, and have a say, in what we’re making, but I feel like I kept it fairly conservative, until I took her breath away with this first dish!

Shrimp with Poblano Sauce & Mex Zucchini (GF)… Sauté some shrimp with a simple spice mixture, and then whip up a Poblano yogurt sauce with a kick of some serranoes, or not… Lol… but beware, when you sauté them, they will take your breathe away. We paired it with zucchini & carrots seasoned with cumin & paprika topped with cotija cheese.

Bison Picadillo w/Cauli Lime Rice (GF)… Pair the amazing flavor of bison with a fire roasted tomato puree, and then pair with sauteed chopped cauliflower seasoned with lime and cilantro. YUM!

Sweet Potato Chipotle Stew (GF)(VG)… A nice fall stew with some chunks of sweet potato and the rich smoky flavor of chipotle peppers in adobo sauce. This is a simple stew that will definitely wake up those taste buds!
