And, that means easy to cook and easy on the budget! Super flavorful recipes this week, but fair warning, the veggies for the bison dish do take about an hour to roast. It was fun to make, but because there are potatoes in there, it took while. Slice them thin!

Mint & Feta Bison Patty with Greek Veggies (GF)… Another amazing recipe with minimal ingredients! The mint & feta bison patties is the perfect combo for these simple oregano-seasoned veggies. Have some fun arranging the veggies, but be sure to slice those potatoes thin, they take awhile to cook. ENJOY!
Chicken Sausage with Pasta & Autumn Veggies… Minimal & simple ingredients make up this autumn recipe. While the butternut squash and brussels are roasting, sauté up the chicken sausage with garlic and butter. Mix it all together with some Faralle and enjoy!
