Nov 17th: Coconut Chicken & Cauli-Rice, Steak Power Bowls, Sausage/Kale Soup

Sometimes recipes don’t work out, and that’s… OK. lol.

We made a Chicken & Broccoli Cheddar soup which didn’t come out the way I planned, BUT, after resting in the fridge for a day, it was actually really good. It was just not the texture people expect from a “cheddar” soup. So, we are posting a old time FAV that is absolutely delicious: Sausage & Kale Cauliflower Soup!

The Coconut Chicken and Steak Power Bowls are amazing, though, so that made up for it. I roasted the Cauli-Rice for the chicken recipe, and THAT was a good call. Such a great flavor.

Coconut Chicken with Roasted Cauli-Rice (GF)… Start out by roasting from lime-enhanced cauliflower while you sear chicken seasoned with smoked paprika & oregano. Deglaze the pan to make a rich coconut cream sauce for your chicken… Super delicious.

Hibachi-Style Steak Power Bowls (GF)… While the steak is marinating in a spicy ginger marinade, set the skillet to high and stir fry up the veggies in sesame oil and Tamari. Leave it on high and fry up the steak and you have a power bowl ready to devour!

Sausage & Kale Cauliflower Soup (GF)… If you LOVE potato soup, you will absolutely LOVE this cauliflower soup with Italian sausage and kale. We used a spinach & kale mix. All simple ingredients for a simple meal you can whip up fast!
