Thai Chicken Quinoa Bowls (GF)… This is a super colorful and super nutrient-dense dish. You can make this sweeter or more “peanut-ier” when you make the sauce. This recipe is more sweeter. Peanuts have a lot of fat, but its healthy fat that gives you energy. The veggies are mixed separately with vinegar and sesame oil to keep them fresh & crisp before mixing to eat! ENJOY!

Turkey Stuffed Potato (GF)… This is taco-seasoned ground turkey sauteed with onions, red bell pepper, and diced tomatoes stuffed into a roasted sweet potato. Paired with roasted greens beans, this dish is super simple!

Beef & Veggies Pasta… A true one pot dish you can easily make your own with your favorite veggies. We chose broccoli, bell pepper, & zucchini. Error on the side of adding all or more tomatoes, they bring out the flavor of the dish!
