
Another great week of SIMPLE ingredients to make amazing dishes.
It’s always nice to cook meals that use fresh spices to bring them to life. We revisited a couple of favorites, and introduced a new Chicken Pesto that is amazing! We hope you love them!
Philly Bison Stuffed Pepper w/Lemon Parm Power Slaw (GF)… Inspired by one of our Preppers, Christina, who wanted us to create a “healthy” version of a Philly Cheesesteak. I think this stuffed pepper recipe captures the essence of it. I used Bison which is leaner (plus, I love it!) and coupled it with a cool lemon & parm power slaw. The sweet cherry peppers & juice really boosts the flavor!
Pesto CauliRice with Chicken (GF)… The chicken and cauliflower are simply sauteed with minimal spices, but the pesto brings it all to life! I made my own pesto with fresh basal, olive oil, and almonds! Almonds have a little less fat than pine nuts.
Mustard & Thyme Pork Medallions (GF)… Amy and I love mustard sauces and pork tenderloin, so this was a natural combo. The marinade for the pork tenderloin is amazing, but the mustard sauce with fresh thyme and Greek yogurt brings the pork to another level! We paired it with brown rice, and roasted broccoli and brussels.
