
I was on my own this week, so I carefully thought about HOW I would cook 3 meals at once and quickly.
So, I choose a slow cooker recipe, a salad, and a full meal. This allows me to get the slow cooker going & veggies roasting, while I focus on the full meal. While I’m cooking the full meal, I was able to cook the protein for the salad.
Once done, it was only a matter of building a salad and plating everything up! It all flowed very well!
Honey Citrus Salad & Blackened Chicken (GF)… Blackened chicken over a healthy salad mix that you can make your own along with this amazing sweet and citrus dressing! Yum!
Coconut Curry Steak & Veggies (GF)… An amazing slow cooker recipe producing tender steak along with a rich coconut curry sauce. We served it over Jasmine rice with curry veggies.
Buffalo Chicken Stuffed Sweet Potato (GF)… Oh, best recipe ever! We mix the amazing Tangy chicken recipe from CleanFoodCrush with our buffalo yogurt sauce and blue cheese over a baked sweet potato. Heaven!
