Aug 20th: Turkey & Zucchini Patties, Italian Sausage Pasta, & Chicken Boxes

This week was Amy’s turn to pick out meals. I took charge last week, and while the plates were good, we discovered that it’s time to give Salmon a break. LOL.

But she starts her dream job this week!! Amy is now a professor at the local college teaching in her field: Cardiac Sonography!! Wooooo!! So, she wanted lunches that were “tried & true”. Meals that she would definitely look forward to.

TURKEY PATTIES… A great way to sneak in some extra veggies for you or your loved ones. These turkey patties are loaded with zucchini, and then we paired them with roasted green beans along with roasted baby potatoes with ‘Everything but the bagel’ seasoning! Magical stuff!

PASTA… This is a fairly decadent dish. It can be scaled back with different protein, like chicken, beef, or bison, and you can limit the cheese, OR you can push forward and treat yourself. This is definitely a comfort food, and it is definitely delicious.

CHICKEN… A truly simple, but exciting dish that I always look forward to eating. I love combinations like this. You can either grill chicken breasts or buy pre-cooked grilled chicken and save even more time! This is a great dish that you can make your own!
