Oct 15: Lemon Pepper Cod, Pumpkin Tomato Pasta, Balsamic Chicken

We’re still enjoying the cool weather coming in, but we know some 90 degree days are coming. This is Texas. Winter in the morning and summer in the afternoon.

We got a couple of new dishes along with our all-time favorite Balsamic chicken!

LEMON PEPPER COD… Keep it simple when it comes to white fish, so the flavor of the fish comes through. We used some Lemon Pepper Panko (I bought by mistake) along with a little butter and lemon. We paired it with roasted carrots and crispy red potatoes!

PUMPKIN TOMATO PASTA… We’re not usually fans of baking pasta, but this dish is mostly made in the skillet and then baked for a short period. This decadent dish has Pumpkin puree, some roasted walnuts with sage, and fontina cheese! A nice surprise with every bite!

We paired it with roasted green beans and Brussels sprouts.

BALSAMIC CHICKEN… This is the easiest dish ever to make and bulk up if you have a big gathering! 5 minutes of prep gives you fall apart chicken slow cooked with fresh spices, balsamic vinegar, and brown sugar.
