I was feeling Greek. Amy was feeling Mexican… and somehow, we landed on a Ramen dish and two Mexican dishes.
I LOVE RAMEN, and I was surprised Amy agreed. This was a tremendous recipe!

SWEET GINGER CHICKEN RAMEN… An amazing and simple ramen dish topped with a sweet ginger-basted chicken. As the broth with ginger, soy sauce, veggies, and lemon grass simmers to perfection, pan fry the chicken with the sauce to thicken. Great with Sriracha!
TURKEY STUFFED SWEET POTATOES… Simply whip up the ground turkey in a skillet while your sweet potatoes are cooking in the microwave. Top your potato with the turkey mixture along with some cheddar cheese and avocado! Enjoy with your fam!
VEGGIE & BLACK BEAN SKILLET… Another super simple one skillet meal that you can bulk up for the family. They’ll love the simple spices and fire-roasted tomatoes topped with Greek yogurt, maybe some shredded cheese…and your favorite hot sauce, of course!
