Jan 7: Sesame Ginger Beef & Broccoli, Blackened Cod, Veggie & Chicken Stew

Happy New Year!

If you are a new year’s goal-setter, set realistic goals that are EASILY attainable and work up from there. Don’t shoot for the moon right away! Enjoy the journey!

We’re just looking to get back into normalcy right now. Once we complete that step, then onto NEXT STEPS!

Amy is on deck today showing you this week’s recipes!

Sesame Ginger Beef & Broccoli… This is a one sheet pan dish that is, not only simple, but has a rich & sweet ginger taste. Cook the steak and broccoli together, remove the broccoli to broil the steak to achieve crispy goodness! Served with rice and a spicy cucumber salad. Careful with the red chili flakes!

Blackened Cod & Veggies… Grab all your spices and turn the pan on high! We found some fresh cod at the market and blackened it; served up with a side of rice and roasted green beans. Squeeze some lime juice on there to make the flavors pop!

Lots of Veggies Chicken Stew… Wow! This is an amazing stew for those chilly evenings! Tender chicken thighs with loads of hearty veggies from potatoes, carrots, celery, and green beans in a rich and savory broth. This is a good one!

ENJOY!
