Jan 14: Orange Cilantro Chicken, Venison Goulash, Fall Harvest Stew

Do you love broccoli? I (Paul) love broccoli! LOL, not Amy’s first go-to for veggies, but I put it in TWO of our meals this week. That’s what happens when I shop alone!

The meals this week are amazing! I suggest them all, but I definitely would recommend the Fall Harvest Soup with the home-made Cashew Parm!

Orange Cilantro Chicken & Salsa (GF)… Oooo, let the chicken marinate as long as possible and the orange flavor will pop in your mouth! Roast the broccoli and then broil the chicken to crispy perfection! Served over Cilantro Lime Jasmine rice. YUM!

Venison Goulash & Veggies… A simple dish that is full of flavor. Of course, you can substitute ground, beef, turkey, or bison… but we were gifted with some venison which is lean and very flavorful. Served over protein plus farfalle with steamed broccoli!

Fall Harvest Stew (GF)(VG)… Nothing beats the chill like soups & stews! We love’em! Bring all your fall favorites together (Butternut Squash, Golden Beets, Onions, etc) and roast them to perfection, blend them, and serve it up with some home-made Cashew Parm! So delicious!
