Feb 18: Ground Bison Chimichurri, Red Pesto Chicken, & Greek Meatballs

Well, I had the house and kitchen to myself again, and it was quite nice.

Not only was I really productive, which is hit or miss, but I managed to make a menu, go shopping, and get the cooking done myself.

All in all, it turned out fairly well, even though I messed up quite a bit. lol… but it’s all still edible!

And the meatballs were a definite treat!!

Ground Bison Chimichurri… A simple and wonderful dish. We love ground bison. It’s flavorful and a bit leaner than ground beef. It’s simply flavored with chili powder, paprika, and oregano served over Jasmine rice and topped with Chimichurri sauce!

We paired with roasted zucchini!

Red Pesto Cauliflower Rice… I have never used red pesto before, but wow, this was an amazing dish, AND SIMPLE!

This is a ONE SKILLET dish you can cook in ten minutes if you buy precooked chicken and cauliflower rice. We decided to roast chicken and hand chop the cauliflower for larger bits…. BUT, throw in the red pesto, tomatoes, spinach/kale mix and fresh dill, and you got a meal the family will devour!

Greek Meatballs & Salad… An amazingly simple dish to explore some new flavors!

This is a glorious mixture of ground lamb and turkey along with fresh parsley, dill, and mint served with fresh Tzatziki sauce.

We served with a shredded Brussels Sprouts salad with artichokes, tomatoes, and feta cheese. A wonderful combination to garnish with some olive oil and balsamic vinegar!
