Amy took the weekend off from the girls and helped out. Lol.
She still had a lot to do, but she cranked out 3 dishes by herself while I cooked one! Yep! Two of those dishes were slow cooker recipes, so she knocked those out in like 20 minutes… 20 minutes for 8 servings! Not too bad.

BBQ Chickpea & Black Bean Quinoa Bowl (GF)(VG)… Check out this amazing vegetarian dish! A great way to get your BBQ craving. Sauteed the chickpeas so they are nice and crispy, and then toss in your favorite Gluten-free BBQ sauce (Sweet Baby Ray’s makes 9 flavors!) along with some black beans. Toss over some quinoa with a spinach and garnish with pickled onions and a sweet Greek yogurt dressing!
Slow Cooker Balsamic Chicken (GF)… Easy, easy, slow cooker recipe that you can pair with anything. We paired it with brown rice and steamed broccoli. Use chicken breasts or thighs and season generously with basil, oregano, thyme, and fresh rosemary. Simmer in a simple balsamic sauce to perfection!
Venison Meat Sauce w/Spaghetti Squash (GF)… Amy makes an amazing spaghetti sauce starting with the ‘trifecta’: onions, celery, and green bell pepper. Simply, add your favorite meat (or not); we added venison. Usually, we add bison. We paired the sauce with roasted spaghetti squash. A great and crunchy alternative to pasta!
Slow Cooker Tortilla Soup (GF)… Holy cow this is easy!! Throw everything in the crockpot! With about 10 minutes of prep, you can have as much of this tasty tortilla soup you need; big family or solo! Garnish with some lime juice, fresh cilantro, and avocado! YUM!
