Mar 24: Ginger Lime Shredded Pork, Spicy Peanut Chickpeas, Dijon Bison Patty

WOW! What a collection of simple recipes this week!

Easily make all of them, or your choice, but you won’t spend too much time in the kitchen with these. AND, they are all super tasty. I definitely looked forward to eating all of these dishes, and that is SUPER IMPORTANT when we come up with recipes every week. We gotta like ’em!

Sesame Ginger Lime Shredded Pork (GF)… A simple & versatile slow cooker meal with an amazing ginger & lime flavor you can serve as is, or in tacos or salads. We paired it with roasted veggies and sweet potatoes.

Spicy Peanut Chickpeas (GF)(VG)… An easy and very tasty dish of a tangy and/or spicy peanut sauce drizzled over chickpeas served with chopped kale and Jasmine rice. Whip it up in 15 minutes for dinner!

Dijon Bison Patty w/Kale & Zoodle Salad (GF)… A simple dish that can easily serve 1 or bulked up for a big family. A tasty mixture of Dijon & Worcestershire in the ground bison grilled up for patties served with a spinach/kale mix, zoodles, and avocado. Season the mix the way you like with lime juice, fresh herbs, like cilantro, mint, dill, parsley, or a combination. YUM!
