Apr 14: Banh Mi Pork Salad, Creamy Mustard Chicken, Chipotle Butternut Squash & Black Beans

Wooo, it felt good to be back on track.

I took the reigns today and cooked all the meals while Amy worked. Honestly, since we look for recipes to simplify and make our own, its easy to cook our recipes fast! We definitely aim to keep it simple for ya!

Banh Mi Pork Burger Salad (GF)… I love the Banh Mi style of cooking. Fresh Basil and Cilantro with Sriracha, fish sauce, and sugar all inside a pork patty. I would definitely GRILL this up as oppose to the pan, and then I paired it with a shredded Brussel salad! YUM!

Creamy Mustard Chicken & Greens (GF)… Oh WOW!! I loved this dish! I couldn’t stop dipping my finger into the creamy mustard sauce made from Dijon mustard & coconut aminos. I think you could easily double the greens, and I paired it with steamed broccoli, while Amy did a salad.

Chipotle Butternut Squash & Black Beans (GF)(VG)… A simple, yet high complex carb, recipe that has a nice sweet & chipotle flavor. The sweetness of the butternut squash really comes through. At the end, I whipped up my favorite Greek yogurt, honey, and lemon sauce to pair with it.
