Apr 21: Chipotle Bison Bowl, Lemon Chicken & Zucchini, Buffalo Turkey, Spicy Tofu

Woooo, just me this week, and for some reason, I whipped up 4 RECIPES!!

We have 3 meat dishes and 1 veggie dish… and honestly, we loved all of them. Aside from the tofu dish, which just takes time to prepare the tofu, all these dishes were relatively simple.

Here they are:

Sweet Chipotle Bison Bowl (GF)… This is a hearty serving of protein and veggies garnished with the sweetness of grilled pineapple. Ground bison is very lean, but you can substitute with beef or turkey.

Lemon Chicken & Zucchini (GF)… A super simple on skillet dish that is easy to bulk up and with minimal ingredients. The chicken and zucchini has a nice lemony flavor that is not too overbearing. ENJOY!

Buffalo Turkey Rice Skillet (GF)… This is an amazing one skillet dish you will love!! Loaded with protein and veggies all together with Frank’s Red Hot sauce and a little cream cheese. Garnish with some additional shredded cheese, or not… honestly, this is an amazing dish!

Spicy Crunchy Tofu w/Quinoa & Greens (GF)(VG)… Wow, so, give yourself some time to make this one, or prepare it on the side while you cook up another recipe… but this one is worth it!! The tofu has an amazing spicy flavor served over a great mix of quinoa and greens with edamame and roasted beets!! SUPER YUM!!
