Time for some adulting and VACATION!!
Yep, we’ll be off on vacation next week, so we’ll dig out some of our favorite recipes for you next week.
Meanwhile, we took the time to double our Bison recipe and make up our favorite TANGY CHICKEN dish to have waiting for us when we return home. These will freeze well, so that all we have to do is add steam veggies and rice. SIMPLE!
Basil & Blue Cheese Bison Patties (GF)… Just a simple, but amazing, protein and veggie dish. Ground Bison is a lean and super tasteful protein with basil, blue cheese, and garlic. We paired it with steam broccoli and roasted red potatoes.
Chicken Sausage & Summer Veggies (GF)… Another simple ONE SKILLET dish aside from the optional rice. Pick your fav chicken sausage and summer veggies, and then saute them up with some onions and garlic! We paired it with our favorite Jasmine rice.
Chicken Sausage & Summer Veggies (GF)… Ever tried Baby Bok Choy? It’s similar to spinach, but has a little more crunch. We served it up with a spicy chicken stir fry with mushrooms over brown rice. Super yum!
Spaghetti Squash, Mushroom, & Goat Cheese (GF)(VG)… Ooooo, if you love mushrooms, you can have fun with this one. I only used 4 oz of mushrooms, but feel free to use more and play with the amounts of ingredients to find your sweet & spicy. Saute them up with spinach and red bell pepper over spaghetti squash…and to bring it all together, garnish with goat cheese!! YUM, YUM!!
