May 26: Summer Chicken Salad, Thai Peanut Bowl, Salmon Wraps, Spinach Frittata

Ok, so, we’re getting back into the swing of things… but we are rusty. lol

A week after vacation, and it feels like we’re prepping for the first time, but it was SO worth it this week. AND, we aimed for some cold dishes this week with this heat in Texas!

We made lunch and dinner plates along with a breakfast plate that always saves the morning. It’s so nice to wake up and have an amazing frittata waiting for you!

Summer Chicken Pasta Salad… A simple cold dish, pasta and chicken salads are so refreshing. This is a mix of both with a pesto dressing and summer veggies!!

Ground Turkey Thai Peanut Bowl (GF)… Wow, this was a good one!! A one skillet dish that will definitely aim to please. It has a nice tangy peanut flavor and the quinoa cooks right in the skillet. No need to prepare first. We served it with roasted green beans!

Salmon Lettuce Wrap (GF)… Another cold salad served in lettuce wraps. Again, just pull out and eat! Oven bake the salmon with smoked paprika and toss with a yogurt dressing with fresh dill & chives. We served this with a pineapple slaw, which we think a pineapple avocado salsa probably would have been better.

Spinach, Feta, Tomato Frittata (GF)(VG)… We love frittatas, and with a little bit of effort, this makes 4-5 amazing servings that will make you smile in the morning. A combination of spinach, feta, tomato, and zucchini. Yum!
