July 7: Bison w/Roasted Brussels, Margarita Shrimp, Tzatziki Chicken Salad

We always aim to KEEP IT SIMPLE and keep the recipes AMAZING. We never want to sacrifice flavor when we are eating these meals twice a week.

This week we have more amazing recipes for you from Bison to Chicken to Margarita Shrimp!! YUM! YUM! …and all meals have Greek yogurt in them this week. Lol.

Bison w/Roasted Brussels & Shallots with Smashed Potatoes (GF)… We like ground Bison because not only is it a bit leaner, but definitely more flavorful! Amy added some Dijon and Worcestershire and I paired it with roasted Brussels & Shallots along with smashed potatoes!! A little side of avocado crema to bring it all together!

Margarita Shrimp w/Asparagus & Cilantro-Lime Rice (GF)… This is an amazing marinade with a wide array of spices, brown sugar, and a little of your favorite tequila (which of course is optional). I would recommend grilling these up to a good char. I paired with with asparagus. Amy made an excellent Coconut Pineapple Slaw!

Tzatziki Chicken Salad Lettuce Wraps (GF)… Why build it when you can throw it all together in a chicken salad, right? And, we decided to use lettuce wraps, instead of pita bread. Of course, you may feel different, but with all the ingredient thrown together, it definitely makes for a quicker meal!
