Hey, Meal Preppers! Ya know, life is too short to eat boring food.
So, another great week to step out of the box with a couple of recipes, and then we made one of our all time favs, especially for company!
All in all, it SEEMED like a lot of ingredients, but not really, but WOW, these are some tasty meals! ENJOY!
Chili Lime Wild Salmon w/Spicy Tahini Dressing (GF)… Drizzle an amazing chili lime sauce over the salmon, and while is bakes, whip up some cilantro-lime rice! And, steam some broccoli to mix it with some zesty microgreens! A good source of antioxidants your body loves!
Veggie Stacked Enchiladas (GF)(VG)… One of our favs that’s super easy to make and customize! What veggies do you love? Roast them all up, and then stack them together with some corn tortillas, salsa, and cheese!
Cuban Chicken & Black Beans (GF)… An all new recipe for us that we DID simplify. The chicken marinade has as a rich citrus & cumin flavor as well as the beans, and all pairs beautifully with cilantro-lime rice. We added a cool mango salsa to go on top to complement the flavors! A bit carb heavy!
