It’s COOOOOLD this week for us, so it’s Beef Stew on the stove!!
And check it out! It’s Amy on camera! The cold weather gave her a boost of energy, plus she was ready to make some amazing beef stew!
I paired it with a favorite of ours, Bison Rissoles, which is packed with nutrients, along with shredded chicken tacos. The chimichurri sauce with this is SO GOOD. This is such a simple dish with amazing flavor! Invite some company over tonight for dinner!!
Bison Rissoles & Sweet Potatoes (GF)… An amazing mix of veggies within lean ground Bison. Served with Sweet Potato medallions with a hint of coconut oil and paprika and sauteed spinach.
Shredded Chicken Tacos & Mex Cauli-Rice… While the chicken is frying up in the pan, whisk together an amazing, rich, & creamy chimichurri sauce! And, get those veggies in by replacing the rice with cauliflower bits for the Mexican rice!
Beef Stew (GF)… By far, Amy’s favorite stew to make, and the flavor is so rich and unique, (kind of smokey?) because of the stout beer. Minimal ingredients needed for this one!
